New client news - Auberge du Lac

New client alert! We’re excited to be working with Auberge du Lac and their new head chef John Barber.

John has exciting plans to reopen the beautiful lakeside restaurant, set in the grounds of The Brocket Hall Estate, Hertfordshire in March 2023. With a vision and a passion to put Auberge back on the map as a food destination, John is already giving guests a taste of what’s to come with a series of intimate pop-up events.

This ambitious young talent, has an incredible gastronomic pedigree (having learnt his craft at The Mandarin Group) and modern British style of cooking inspired by his mentor Daniel Boulud and other home-grown chefs, such as Tom Kerridge and Nathan Law.

Using produce grown on-site in the new kitchen garden, and the finest local ingredients he will be creating an amazing seasonal menu.

Describing the kitchen as a modern day pirate ship, John loves working in a team which motivates each other and the adrenaline of a busy service. Speaking of his hopes for Auberge, he says “I want guests to feel relaxed and come at anytime, instead of just a special occasion. We are creating a new unpretentious fine dining experience here”.

We are absolutely buzzing to be helping John and the team to tell the many stories which are contributing to the evolution of the new Auberge. Watch this space!
